Marsannay 'La Montagne'
Domaine Sylvain Pataille
'La Montagne' is a vineyard located on a steep slope at the highest altitude in the Marsannay region, between 300 to 350 meters above sea level. Bordering the forest, this cool-climate parcel has almost no topsoil and is composed of pure white 'Oolitic Limestone' (Oolithe Blanche), considered the noblest soil in Burgundy. Sylvain Pataille ferments the grapes grown on these barren white stones with 100% whole clusters, minimizing extraction to capture only the purest essence of the grapes in the bottle. The reason luxury collectors and critics on the global wine platform Vivino go wild for this wine lies in its "extreme aerial texture that completely defies weight." The moment the cork is opened, any heaviness of dark fruit is nowhere to be found; instead, cool and fragrant aromas of wild strawberry, white peony, and blood orange bloom. On the palate, the tannins are as smooth and weightless as a Möbius strip, while the electric acidity and saline, crushed-rock minerality emanating from the white limestone transparently pierce the taste buds. Rather than relying on power and muscle, it is the pinnacle of high-end Pinot Noir that triumphs through breathtaking precision and floral brilliance.
1. Roasted Partridge or Quail with Delicate Herb Jus: This is an extremely delicate high-end dining proposed by Michelin 3-star sommeliers to ensure that the perfume-like, transparent, and light body of 'La Montagne' is never overpowered. Instead of the heavy fats of beef or lamb, the clean, feather-light meat of small game birds (partridge, quail) perfectly assimilates with the wine's transparent texture. Accompanying it with a clear jus infused with light herbs, rather than a heavy sauce, triggers a brilliant 'molecular mirroring effect' with the wine's white pepper and floral notes derived from whole-cluster fermentation. 2. Veal Tenderloin Carpaccio or Seared Toro Tataki with White Truffle Oil: This is the practical marriage chosen by luxury collectors on Vivino to fully enjoy the 'pure white minerality' of this wine. Instead of a heavy cooked steak, the pure protein of raw meat (carpaccio) melting in the mouth strikes a fantastic balance with the wine's electric acidity. Even with seafood, lightly searing the exterior of rich tuna belly (Toro) allows La Montagne's signature saline finish to explosively draw out the belly's umami, blurring the boundaries of gastronomy.
