Domaine Antonin Guyon Bourgogne Hautes-Côtes de Nuits 'Les Dames de Vergy'
Domaine Antonin Guyon (Dominique Guyon)
This is a tribute to the Hautes-Côtes de Nuits region by Domaine Antonin Guyon (also bottled under the name of the son continuing the legacy, 'Dominique Guyon'), a prestigious estate owning numerous Premier Crus and Grand Crus across the Côte d'Or. Located in the village of Meuilley near Nuits-Saint-Georges, this vineyard consists of clay and limestone soils and is perfectly situated on a south-facing slope. The grapes are hand-harvested, fermented in wooden vats, and aged for 12 months—half in French oak barrels and half in large oak foudres—preserving the pure essence of the Pinot Noir. The reason enthusiasts on the global wine platform Vivino highly praise this wine as "the most classic and elegant textbook Burgundy you can find at this price point" lies in its "excellent compromise between cool acidity and ripe fruitiness." Upon uncorking, bright aromas of wild raspberry, red cherry, and violet arise, pleasantly followed by Burgundy's signature wet earth and spice nuances. On the palate, without any rough or astringent notes, silk-smooth tannins and vibrant acidity refreshingly fill the taste buds. Its rustic yet finely polished texture delivers a joy that one would never tire of, even if drunk every day.
1. Wild Mushroom Tart with Truffle or Herb-Roasted Chicken: This is the classic marriage most loved by the Antonin Guyon estate and Burgundy locals in their daily lives, representing the textbook pairing that maximizes the 'gastronomic' charm of this wine. The clean protein of an oven-roasted chicken, crispy on the outside and moist on the inside, is affectionately washed away by the vibrant acidity of the Pinot Noir. In particular, a tart featuring sautéed mushrooms and truffle on a buttery pastry explodes into a perfect 'aromatic mirroring effect' with the wine's inherent wet earth (sous-bois) and red fruit character. 2. Crispy Duck Breast or Brie de Meaux Cheese: The fail-proof combination chosen by Burgundy enthusiasts on Vivino to enjoy the silky tannins of this wine. The savory, rich fats of the duck breast collide head-on with the electric acidity unique to the Hautes-Côtes de Nuits, delivering a thrilling balance to the palate. For after the meal, pair it with 'Brie de Meaux', a soft blooming-rind cheese that gently melts. The cheese's mushroomy aroma and creamy texture elegantly embrace the wine's red berry flavors.
