Koueigiku Shuzo in Ogi City, Saga Prefecture, is a brewery that was miraculously revived in 2019 by visionary individuals who took over an old brewery that had closed in 2006. With the joining of the legendary Toji (Master Brewer) Katsuaki Yamamoto and their philosophy of "brewing heart-pounding sake like never before," it instantly became a star brewery, causing sell-out phenomenons. This 'Harujion' is a Muroka Nama Genshu (unfiltered, unpasteurized, undiluted sake) designed targeting extreme refreshment suitable for the hot season, using 'Shunyo' rice—a low-protein variety perfect for brewing transparent sake without off-flavors. Looking at the tasting notes of global enthusiasts and sommeliers, they describe the charm of this sake in one phrase: "an elegant, fresh-squeezed grapefruit juice for adults." When poured, gorgeous and fresh aromas of lychee and white grape (muscat) rise up. Upon taking a sip, the fine micro-carbonation unique to unfiltered and unpasteurized sake thrillingly stimulates the tongue, and the drippingly juicy tartness of grapefruit and subtle sweetness rush in with excellent balance. Compared to other Koueigiku lineups where sweetness is dominant, it is much lighter and drier.
