Ozenoyukidoke Junmai Daiginjo Namazume (尾瀬の雪どけ 純米大吟醸 生詰)
Ryujin Shuzo (龍神酒造株式会社)
Ryujin Shuzo in Gunma Prefecture possesses two distinct alter egos: the 'Ryujin' brand, which pursues extreme dryness, and 'Oze no Yukidoke', which seeks the juicy sweetness of fruit. Among them, this 'Junmai Daiginjo Namazume' is the foundation and the most overwhelming best-seller of the Oze no Yukidoke series. 'Namazume' refers to a brewing technique where the sake is pasteurized only once right after fermentation, skipping the pasteurization before bottling to fully seal in the unique freshness and vitality of newly brewed sake. According to global sommeliers and enthusiasts, the charm of this sake lies in the ultimate brightness created by the trio of "Fresh, Fruity, and Juicy", exactly as the brewery's catchphrase suggests. When poured, the sweet aromas of ripe red apple, white peach, and melon fill the space. Upon taking a sip, a fresh sweetness—as if fruit juice was squeezed right into it—and a round, soft umami affectionately coat the tongue. Unlike 'Ryujin Karakuchi' which intensely sliced the palate, this is a lovely sake that melts roundly and elegantly in the mouth, leaving a pleasantly sweet lingering finish, true to its name, "the melting snow of Oze."
1. Prosciutto Melon or Crackers with Cream Cheese: It is a typical 'modern fruity' sake whose true value explodes when served in a wine glass. The bright sweetness of apple and peach shows an excellent 'sweet and salty' marriage with salty jamón (prosciutto) or rich cream cheese. It is perfect as an aperitif to open the dining experience. 2. Pork Teriyaki or Sweet and Sour Pork with Fruit Sauce: While Ryujin Karakuchi played the role of 'washing away' greasiness, Oze no Yukidoke creates excellent synergy by affectionately 'mirroring' sweet dishes based on soy sauce or fruit sauces. The juicy fruit aroma of the sake elegantly elevates the meat's juices and the sauce's sweetness.
