While sakes meant for ice usually raise their ABV above 18% to maintain flavor as the ice melts, Shirataki Brewery took the opposite approach: lowering the ABV to a light 10-11% while concentrating the flavor density like a syrup, showcasing a brilliant paradigm shift.
