Kaminoizumi Genshu (神の泉 原酒)
Toa Shuzo (株式会社東亜酒造)
Toa Shuzo, originally founded in 1625 in Chichibu, Saitama Prefecture, and now located in Hanyu City, is a historic brewery. While well-known among enthusiasts as the roots of Chichibu whisky, their foundation firmly lies in sake brewing. This 'Kaminoizumi Genshu' (Spring of God, Undiluted Sake) differs from regular sake—which is diluted with water after fermentation to adjust the ABV. Instead, it is bottled exactly as an undiluted 'Genshu,' boasting an intense punch of 18-19% ABV and standing as an everyday sake with ultimate cost-performance. According to global enthusiasts and local Japanese consumers, the charm of this sake lies in its "intuitive and heavy punch" that requires no complex deconstruction. When poured, it releases a deep aroma of grain, a sweetness reminiscent of caramel, and the intense alcoholic vigor unique to Genshu. Upon taking a sip, the dense, viscous sweetness provided by the -3.0 SMV heavily presses on the tongue, and the over 18% alcohol warmly heats the throat. While the alcoholic texture might feel a bit rough when drunk straight at room temperature, serving it thoroughly chilled or 'on the rocks' in an ice-filled glass pleasantly smooths out the sweetness and the punch, delivering a magnificent and unexpected charm.
Kaminoizumi Genshu is characterized by its rich sweetness, viscous texture, and powerful alcohol presence. Considering these characteristics, I recommend the following two pairings: 1. Spicy Stir-fried Pork Belly or Charcoal Grilled Yakitori with Tare: The intense punch of the over 18% ABV Genshu and the dense sweetness of the -3.0 SMV shine brightest when paired with greasy and stimulating dishes rather than delicate ones. Enjoyed on the rocks, it completely stands its ground against the heavy weight of spicy or sweet-and-savory seasonings, refreshingly cleansing the palate. 2. Shiokara (Salted Squid) or Dense Otsumami: Because the sake itself is very rich and voluminous, it shows an excellent synergy with traditional, salty, and umami-packed Japanese delicacies (Chinmi). A glass of Genshu on the rocks with a simple snack after work heavily melts away the day's stress.
