Katou Shuzo is a brewery located in Joetsu, Niigata Prefecture—a region famous for heavy snowfall and as one of Japan's largest sake-producing areas—brewing honest sake using the region's clear water and rice. This 'Ichigoichie Junmaishu' embodies the warm philosophy derived from the Japanese tea ceremony: "This time I meet with you is a once-in-a-lifetime encounter, so I will entertain you with my utmost sincerity." Rather than walking the path of flashy premium sake, it aims to be the "ultimate everyday sake" that cherishes the connection with the simple dishes encountered at the dinner table every night. According to global enthusiasts and sommeliers, the charm of this sake lies in its "humility and cleanliness" that never interferes with the aroma of the food. When poured, comforting grain aromas of steamed rice and a faint nuance of white flowers modestly rise. Upon taking a sip, a clear and transparent texture resembling Niigata's snowmelt water moistens the tongue, and an unstimulating, soft rice umami affectionately fills the mouth.
