This room is filled with a massive amount of natural snow accumulated during winter, maintaining a steady low temperature around 3 degrees Celsius year-round without using electricity. The undiluted sake, brewed with sake rice milled to 50%, is aged in this stable, vibration-free environment for a long time, smoothing out all roughness before being released. According to global enthusiasts and sommeliers, the charm of this sake begins with the noble aromas of pear, melon, and faint vanilla born from three years of aging that gently rise when poured. Upon a smooth sip, the incredibly round and smooth texture granted by the snow aging wraps the tip of the tongue, and the pure, transparent umami of the rice elegantly blooms. Despite its substantial 17% ABV, there is absolutely no harsh alcohol bite; instead, the soft sweetness of a -1.0 SMV and gentle acidity affectionately embrace the palate.
