Hakkaisan Junmai Daiginjo (八海山 純米大吟醸)
Hakkaisan Brewery (八海醸造)
Hakkaisan is the pride of Hakkaisan Brewery, located in the snowy region of Minamiuonuma, Niigata Prefecture, and stands as a synonym for Japan's clear and crisp sake. In August 2020, under the philosophy of "delivering good sake to more people," the brewery revamped its everyday lineup to elevate the standard of food-pairing sake, milling the Junmai Daiginjo down to 45%. By carefully blending the pinnacle of sake rice, Yamada Nishiki, with Gohyakumangoku and Miyama Nishiki, and brewing it with "Raiden-sama no Shimizu" (pristine subsoil water from the melting snow of Mount Hakkai), they completed the pure and crisp structural backbone unique to Hakkaisan. According to global enthusiasts and sommeliers, the charm of this sake begins with the noble aromas of pear, subtle melon, and white flowers that gently rise when poured. Upon a smooth sip, the silk-like texture brought forth by the 45% polishing wraps the tip of the tongue, and the clear, transparent umami of the rice elegantly blooms without feeling heavy. Within the neat outline provided by the +4.0 SMV, a delicate and soft acidity of 1.3 affectionately embraces the palate, showing a wonderful balance that elevates the dignity of any paired dish. Thanks to its refreshing and clean lingering finish that clears the mouth as if snow is melting, it is a lovely sake to enjoy beautifully chilled from the beginning to the end of a meal in total comfort.
Pairing recommendations for Hakkaisan Junmai Daiginjo: 1. Traditional Pairing: Sea Bream Sashimi - The delicate sweetness and clean mineral aroma of Hakkaisan Junmai Daiginjo enhance the clean and mild flavor of sea bream. The sake's smooth texture harmonizes with the delicate texture of the sashimi, and the subtle ginjo aroma enriches the fish's flavor. The refreshing acidity provides a clean finish on the palate. 2. Creative Pairing: Asparagus & Prosciutto Salad - The fresh pear and melon aromas of Hakkaisan Junmai Daiginjo blend exquisitely with the subtle sweetness of asparagus and the saltiness of prosciutto. The sake's transparent umami deepens the flavor of the salad, and the clean, dry finish further accentuates its freshness. The delicate acidity cuts through the richness of the prosciutto.
