Rather than boasting flamboyant fruity aromas like a Daiginjo, it is a reliable companion for the everyday dining table. By polishing the rice to 68%, it retains the robust, inherent umami of the grain, while achieving the neat and crisp profile (Tanrei Karakuchi) typical of Niigata sake with an SMV of +4.0 and a soft acidity of 1.5. The true charm of this sake, which captivates sommeliers and long-time enthusiasts, lies in its overwhelming versatility that delivers excellent performance across any temperature range. When beautifully chilled and poured, a very faint and neat aroma reminiscent of freshly steamed rice gently rises, offering an impeccably refreshing and clean swallow. However, the true worth of this sake is revealed when gently warmed (Atsukan). As the temperature rises, the hidden round and comforting umami of the rice elegantly blooms to affectionately fill the mouth, while the refreshing and dry finish multiplies the joy of the meal.
