Kizakura Fuku Junmai (黄桜 福 純米)
Kizakura (黄桜)
Kizakura is a prestigious large-scale brewery representing the Fushimi region of Kyoto, renowned for its clear and soft water. Brewed at their state-of-the-art 'Misu Factory,' this 'Fuku (Fortune) Junmai' is an affectionate sake created with the sincere wish that warm fortune will visit the daily lives of everyone who shares it. Notably, rather than using traditional sake rice, it utilizes 100% 'Koshihikari'—a premium table rice familiar to our daily meals—to comfortably bring out the inherent savoriness and familiar umami of the grain. Borrowing the palates of sommeliers and sake enthusiasts, the charm of this sake lies in its comforting presence that blends into everyday life without any flamboyant embellishments. When poured, warm and savory aromas of well-steamed ripe rice and roasted nuts gently rise. Upon taking a sip, the round and smooth attack, crafted by the signature soft water (Fushimizu) of Kyoto's Fushimi region, affectionately wraps the tip of the tongue, while the familiar sweetness and umami of Koshihikari rice elegantly spread throughout the mouth. (※ Sommelier's Correction Note: Some domestic retailers mistakenly describe this sake as being brewed with "Hyogo Prefecture's Miyamizu groundwater." This is an error. Unlike the robust "masculine sake" (Otoko-zake) brewed in Nada, Hyogo, Kizakura's Misu Factory brews delicate and round "feminine sake" (Onna-zake) using the soft water of Fushimi, Kyoto.) Thanks to its approachable 14% ABV volume and cleanly falling lingering finish, it is a lovely everyday sake that is wonderful whether enjoyed beautifully chilled or comfortably at room temperature.
Kizakura Fuku Junmai is a Junmai sake characterized by its subtle sweetness and smooth texture. Here are two pairings that will enhance the flavor of this sake. 1. Flounder Tempura (カレイの天ぷら): The light and crispy flavor of flounder tempura pairs wonderfully with the subtle rice sweetness of Kizakura Junmai. The oiliness of the tempura is cleanly finished by the sake's refreshing character, cleansing the palate, while the delicate flavor of the flounder harmonizes with the sake's subtle fruity aroma, creating a balanced taste. 2. Chicken with Mushroom Cream Sauce (鶏肉のキノコクリームソース): The smooth texture and subtle sweetness of Kizakura Junmai pair well with the rich and creamy flavor of mushroom cream sauce. The earthy notes of the mushrooms and the savory flavor of the chicken blend with the sake's subtle rice aroma to deliver a deep flavor, and the sake's subtle acidity cuts through the richness of the cream sauce, making it even more enjoyable.
