It uses 100% top-grade 'Miyamanishiki' rice, meticulously and organically grown by local farmers (Tenju Sake Rice Research Group) who have collaborated with the brewery for over 20 years. Furthermore, it is fermented using the unique 'Nadeshiko (Dianthus) flower yeast (ND-4),' isolated at the Tokyo University of Agriculture.
