The brewery strictly keeps the rice polishing ratio formerly disclosed as 40%, SMV, and acidity undisclosed, compelling consumers to focus on the physical texture and terroir of the liquid rather than numerical data. To trap the naturally occurring micro-carbonation from fermentation, the sake undergoes pasteurization in the bottle, delivering a light physical impact upon opening. The structural backbone of this sake lies in the precise tension that controls the extremely round and elegant umami of the Special A District Yamada Nishiki with sharp acidity and a refreshing bitterness.
