Classic Senkin Muku (クラシック仙禽 無垢)
Senkin (せんきん)
Classic Senkin Muku is a food-pairing sake brewed by Senkin in Sakura, Tochigi, utilizing 100% Domaine Sakura Yamada Nishiki grown in rice paddies sharing the same underground water vein as the brewery. The brewery strictly keeps the SMV and acidity undisclosed, compelling consumers to focus on the physical texture and terroir produced by the traditional Edo-period Kimoto method rather than numerical data. By inducing fermentation purely with natural microorganisms without added yeast, it delivers a complex yet light physical impact upon opening. The structural backbone of this sake lies in the precise tension that controls the round, high-density sweetness of Yamada Nishiki with a sharp acidity over 2.0. When poured, citrusy esters of muscat and green apple along with clear lactic nuances are detected. Upon tasting, a juicy attack around a -3 SMV expands alongside the transparent umami of the rice. However, entering the latter half, the sharp lactic acidity combines with the 14% undiluted alcohol tension to instantly slice through the expanding sweetness. This perfectly shatters any residual stickiness, providing the exhilarating reset expected of an optimal food-pairing sake.
Senkin Classic (クラシック仙禽 無垢) is a Junmai Ginjo characterized by its clean acidity and mineral flavors. Here are two food pairings that complement the sake's characteristics. 1. Terroir Pairing: Nishin Soba (Herring Soba) - Nishin Soba, a traditional Japanese dish, pairs harmoniously with the delicate flavors of Senkin Classic. The umami of the sweetly simmered herring in soy sauce complements the sake's Domaine Sakura Yamada Nishiki Umami, deepening the flavor profile, while the warm soba broth gently embraces the sake's clean minerality. 2. Creative Pairing: Scallop Ceviche - The refreshing acidity of Senkin Classic enhances the freshness of scallop ceviche. The citrus and herbaceous notes of the ceviche, flavored with lime, cilantro, and onions, harmonize with the sake's Muscat and Green Apple aromas, while the ceviche's light texture complements the sake's Juicy texture, leaving a refreshing finish.
