Modern Senkin Muku is a food-pairing sake brewed by Senkin in Sakura, Tochigi, utilizing 100% Domaine Sakura Yamada Nishiki grown in rice paddies sharing the same underground water vein as the brewery. The brewery strictly keeps the SMV and acidity undisclosed, compelling consumers to focus on the physical texture and terroir produced by the modern Sokujo method rather than numerical data. Bottled under strict temperature control after fermentation, it delivers a light physical impact with micro-carbonation upon opening. The structural backbone of this sake lies in the precise tension that controls the round, high-density sweetness of Yamada Nishiki with a sharp acidity over 2.0. When poured, citrusy esters of lemon and muscat are detected. Upon tasting, a juicy attack around a -3 SMV expands alongside the transparent umami of the rice. However, entering the latter half, the sharp citrus acidity combines with the 14% to 15% undiluted alcohol tension to instantly slice through the expanding sweetness.
