Hakurakusei Junmaidaiginjo Tojo Akitsu Yamadanishiki is a top-tier food-pairing sake brewed by Niizawa Brewery in Miyagi, utilizing 100% Special Grade Yamada Nishiki from the highly esteemed Special A District of Akitsu, Tojo in Hyogo Prefecture. Using a diamond roll milling machine to strictly control frictional heat and damage to the rice, it is milled down to 29%. After a 40-day long-term low-temperature fermentation, it is designed with a clear physical impact through a 15% alcohol by volume and a +1 SMV. The structural backbone of this sake lies in the precise cut-off that controls the extremely transparent and round umami of the Special Grade Yamada Nishiki with an acidity of 1.3 and sharp alcohol tension. When poured, esters of muscat, banana, and melon are detected. Upon tasting, a smooth attack expands alongside the high-density umami of the rice without heaviness. However, entering the latter half, the clear 1.3 acidity and 15% alcohol combine to instantly and physically slice through the expanding sweetness. This perfectly shatters any residual stickiness, providing the exhilarating reset expected of an optimal food-pairing sake.
