All of their lineups are exclusively produced using the 'Kimoto method', graded as 'Junmai Daiginjo', and extracted as 'Nakadori'—the clearest and most balanced middle fraction during the pressing process. Among them, 'First Class' is the top-tier model, utilizing Niigata-grown rice milled down to 40% and bottled as an undiluted sake (Genshu) at 15% ABV. The brewery defines this sake as an 'unfinished sake' that only reaches 100% when paired with food rather than consumed alone, strictly adhering to a food-pairing philosophy that leaves only the structural backbone by stripping away any off-flavors. The physical impact of this sake begins with muscat, banana, and subtle yogurt aromas typical of the Kimoto method detected upon pouring. Upon tasting, a smooth, glass-bead-like attack created by the 40% polishing and Nakadori extraction is felt, while a light sweetness that fleetingly disappears like refined sugar and the pure umami of the rice transparently expand. However, the true structural integrity lies in the dry tension created by the calm lactic acidity of 1.5 and the +2.0 SMV controlling the latter half.
