Nanbu Bijin Tokubetsu Junmai is the signature Tokubetsu Junmai sake of Nanbu Bijin Brewery in Ninohe, Iwate Prefecture, crafted by polishing the local Iwate sake rice 'Ginotome' down to 55%. This product objectively proved its sensory stability by winning the Champion Sake title at the 2017 International Wine Challenge (IWC). The structural core of this sake lies in the contrast between the distinct rice umami generated by the 55% polishing ratio and the high Karakuchi tension (Sake Meter Value +4 to +5) that sharply cuts it in the latter half. When poured, faint ester aromatics reminiscent of white peach and pear combine with the natural grain scent of the rice. Upon tasting, the plump and round umami unique to Ginotome coats the tongue, but soon, the clear acidity of 1.5 and the dryness of plus 4 or higher interlock to physically break down the residual sugar. In the finish, the 15-16% ABV structural integrity articulately cleanses the palate without leaving any stickiness, demonstrating the standard performance of a food pairing sake.
