Houka Junmai Daiginjo Genshu Black Label is a special limited December release from Toshimaya, located in Okaya, Nagano Prefecture. Brewed using 100% 'Takane Nishiki', a rare sake rice native to Nagano, polished down to 49%, it is an undiluted Genshu. Aged at low temperatures for over half a year, it is technically engineered to simultaneously capture the fresh vibrancy of newly pressed sake and a softened profile acquired through aging. The structural core of this sake lies in the contrast between the natural micro-carbonation trapped in the liquid during fermentation and the heavy body typical of a Genshu. When poured, intense and flamboyant ester aromatics reminiscent of melon and pear are intuitively released. Upon tasting, fine bubbles stimulate the tongue, while the dense umami originating from the Takane Nishiki and distinct sweetness form a juicy texture. However, it does not remain merely sweet; the acidity rounded by low-temperature aging and a subtle astringency interlock with the 16%+ ABV to firmly support the palate. In the latter half, the physical refreshing sensation of the micro-carbonation and the structural alcohol sharply cut through the residual sugar, leaving an articulate finish without heaviness.
