Hananomai Homarefuji Junmai Ginjo is a locally focused signature product from Hananomai Brewing, crafted by polishing 'Homarefuji'—a proprietary sake rice developed entirely by Shizuoka Prefecture—down to 60%. Utilizing independently cultured Shizuoka yeast and clear underground water from the Akaishi Mountains, it meticulously encapsulates only the terroir of Shizuoka within the bottle. This product is engineered with an ABV of around 15.5%, combined with a Sake Meter Value of plus 3.0, a low acidity of 1.2, and an amino acid level of 1.3. When poured, a restrained and gentle ester aroma of banana and melon is released alongside the scent of grain. Upon tasting, the round and soft umami unique to Homarefuji rice combines with the 1.3 amino acid level to coat the tongue without irritation. Beyond the mid-palate, the unobtrusive acidity of 1.2 and the dryness of plus 3.0 interlock, completing the typical clear Shizuoka-style profile (Shizuoka-gata Tanrei) that cuts short and sharp without leaving any residual sugar.

Hanano Mai Homare Fuji Junmai Ginjo features subtle banana and melon aromas, a smooth texture, and a clean umami. Here are two pairings that complement this sake: 1. Shirasu Don (しらす丼): Shirasu (whitebait), a specialty of Shizuoka, enhances the sake's subtle rice aroma and mineral notes. The saltiness and umami of the shirasu harmonize with the sake's clean umami, and the addition of lemon juice or ginger further accentuates the sake's refreshing finish. 2. Vegetable Tempura served with Matcha Salt: The round umami of the Homarefuji rice (amino acid 1.3) elevates the sweetness of the vegetables, and the clear minerality in the finish sharply washes away the thin oiliness of the tempura.
