Hakushika Shiboritate is a Futsushu (table sake) grade shinshu (freshly pressed sake) released seasonally in autumn and winter by Tatsuuma Honke Brewing. Signaling the start of the brewing season, this product eschews complex polishing ratios or spec competitions, focusing instead on delivering the physical freshness of freshly pressed liquid and the intuitive flavor of rice to the mass market. This product is engineered with a standard ABV of 14-15%, combined with a Sake Meter Value of minus 2.0 and an acidity of 1.4. When poured, rather than flamboyant fruity aromas, the fresh and sweet scents of newly steamed rice and koji rise linearly. Upon tasting, the subtle sweetness provided by the minus 2.0 profile gently coats the tongue, but soon, the acidity of 1.4 and the minerality of Nishinomiya's famous 'Miyamizu' water combine to firmly establish the flavor structure. The characteristic alcoholic bite of freshly pressed sake sharply cuts any residual sugar in the mouth, leaving a short, refreshing finish without any stickiness.

Hakushika Shiboritate boasts the freshness of steamed rice, mild sweetness, and a clean minerality. Considering these characteristics, I recommend the following two pairings: 1. Tofu Dengaku: The fresh rice aroma and subtle sweetness complement the savory notes of the miso glaze. The tofu's delicate flavor harmonizes with the sake's clean texture, creating a balanced taste. 2. Clear Filefish Soup: The sake's clean profile and refreshing acidity enhance the subtle flavors of the clear filefish soup. The sake's faint banana nuance enriches the fish's umami, while its minerality enhances the soup's refreshing quality.
