Kuromatsu Hakushika Yamadanishiki Karakuchi Junmai Silk is a dry Tokubetsu Junmai sake crafted by Tatsuuma Honke Brewing using 100% Hyogo Prefecture Yamada Nishiki. By dualizing the polishing ratio to 65% for koji rice and 75% for kake rice (mash rice), it is a practical product that controls brewing costs while elevating the natural umami of Yamada Nishiki. As the name 'Silk' indicates, a new brewing method was applied to eliminate the rough texture typical of standard Junmai, achieving an extremely smooth mouthfeel. This product features an ABV of 14-15%, combined with a high Sake Meter Value of plus 5.0 and an acidity of 1.5. When poured, flamboyant ester aromatics are barely detectable, centered instead on restrained grain scents and faint lactic nuances. Upon tasting, a texture that glides like silk—true to its name—coats the tongue, and as soon as the Yamada Nishiki umami spreads, the strong Karakuchi (dryness) of plus 5.0 tightens the palate. Beyond the mid-palate, the distinct acidity of 1.5 perfectly breaks down any residual sugar, completing a sharp finish that cuts cleanly without any sweetness.
