Hakushika Tanrei Karakuchi (白鹿 淡麗辛口)
Tatsuuma-Honke Brewing (辰馬本家酒造)
Hakushika Tanrei Karakuchi is a highly practical Futsushu (table sake) packaged in paper cartons, crafted by Tatsuuma Honke Brewing for mass-market daily consumption. Utilizing the famous 'Miyamizu' water of Nishinomiya and Hakushika's traditional rice steaming techniques, it technically achieves a light (Tanrei) and dry (Karakuchi) profile exactly as its name suggests. This product features a relatively light ABV of 13-14%, combined with a Sake Meter Value of plus 4 and a low acidity of 1.2. This numerical combination is specifically engineered to rigorously exclude sweetness and induce a crisp swallow. When poured, its aromatic intensity is very low, detecting only microscopic grain aromas and faint lactic nuances. Upon tasting, a watery and clear texture grazes the tongue, grounded by the firm minerality unique to Miyamizu. In the latter half, the low acidity of 1.2 cuts any residual sugar without irritation, quickly organizing the palate—a structural characteristic typical of dry sakes from the Nada region of Japan. While it lacks complex layers of flavor, it possesses extreme practicality, functioning without structural collapse across a wide range of temperatures from chilled to hot.
Hakushika Tanrei Karakuchi (白鹿 淡麗辛口) is a sake characterized by its clean and crisp flavor. Here are two food pairings that complement it well: 1. Tofu Dengaku: The subtle sweetness of rice in sake pairs harmoniously with the savory taste of tofu. The sweet and savory flavors of the dengaku miso glaze especially accentuate the sake's dry character. 2. Clear Oden Broth based on Soy Sauce and Bonito Flakes: The microscopically opening grain umami fuses with the amino acids of the broth, and the distinct Karakuchi (dryness) in the finish organizes the sticky sweetness of the soup.
