It adopts the Namachozoshu brewing method where the sake is aged at low temperatures in its raw unpasteurized state after brewing and undergoes momentary low temperature pasteurization only at the moment of bottling. This secures storage stability while flawlessly trapping the refreshing and crisp flavors unique to freshly pressed sake inside the bottle serving as its greatest advantage. The moment it is poured into a glass a light aroma reminiscent of green apple and clear spring water rises. Upon tasting the firm mineral structure unique to Miyamizu the famous water of Nishinomiya lies at the base while the relatively low alcohol content of thirteen percent provides a light and smooth water like texture that coats the tongue.
