Tanigawadake Kokoro is the ultimate mass market realization of the pristine water quality and brewing philosophy of Nagai Sake Breweries located in Kawaba Village Gunma Prefecture. Rather than boasting flamboyant aromatics or intense personality the brewery pursued the ultimate comfort of a sake that does not fatigue the palate even when served daily on the dining table. By polishing Gohyakumangoku and general rice down to sixty five percent they reduced impurities while an appropriate Karakuchi value of +4 delivers a refreshing and clear texture the moment it touches the palate. The greatest weapon of this sake is its near perfect neutrality and drinkability. A soft and low acidity around 1.1 does not stand out but calmly supports the subtle natural sweetness of the rice. The first sip provides a refreshing sensation akin to drinking clear snowmelt water and after swallowing the mouth is scrubbed clean along with a pleasant alcoholic warmth.
