Byakko Bespoke is a flagship series product planned by the high-end sake brand SAKE HUNDRED and brewed by Tatenokawa Sake Brewing in Yamagata Prefecture. Unlike the original 'Byakko', which uses Yamagata's Dewasansan rice, this product uses 100% Hyogo Prefecture 'Yamada Nishiki' to completely redesign the specifications, maximizing its potential as a food pairing sake. It achieves overwhelming transparency through an extreme milling process, polishing the rice down to 18% over 200 hours. The structural characteristic of this sake lies in the contrast between the silky texture created by the extreme polishing ratio (18%) and the heavy volume unique to Yamada Nishiki. It features an ABV of 15.7% and a Sake Meter Value of minus 2.0. When poured, ester aromatics reminiscent of Shine Muscat, white peach, and faint lily flowers are released. Upon tasting, a round and smooth texture with a microscopic oily viscosity coats the tongue, while the plump umami and slight sweetness of Yamada Nishiki build distinct volume. Beyond the mid-palate, the pronounced acidity of 1.4 and the strictly controlled amino acid level of 0.8 suppress the sweetness. In the finish, the acidity and a pleasant mild bitterness interlock to sharply cleanse the palate, demonstrating an extremely transparent fade.
