Sariwon Saimju
신탄진주조
Sariwon Saimju is a refined Yakju, a traditional Korean rice wine, hailing from the Chungcheongbuk-do province. Brewed by Shintanjin Brewery, this elegant beverage offers a delicate dance of subtle floral aromas intermingled with the gentle sweetness of grain. Its medium body and dry profile culminate in a clean, grain-tinged finish, making it a truly balanced and approachable spirit.
The gentle floral notes and subtle sweetness of Sariwon Saimju find a harmonious partner in delicate poached chicken breast, infused with ginger and scallions. The soft texture of the chicken complements the yakju's smooth body, while the aromatics of ginger and scallions enhance the floral notes. Alternatively, a lighter contrast can be struck with a single slice of aged Ossau-Iraty; the sheep's milk cheese's nutty and earthy notes will be a delicious foil against the wine's subtle sweetness.
