Daedukju is a refined Korean *yakju*, a type of clear rice wine, crafted by Shintanjin Brewery. This elegant spirit offers a delicate bouquet of rice and *nuruk*, complemented by subtle floral aromas and a gentle sweetness reminiscent of grain. Its medium body and smooth texture lead to a dry, balanced palate and a clean finish with lingering hints of grain.
To honor the spirit's origin, pair Daedukju with Bossam, thinly sliced pork belly served with fermented kimchi and fresh oysters. The refreshing minerality of the oysters and the subtle spice of the kimchi beautifully accentuate the yakju's clean profile.
