Seongsu Makgeolli
성수주조장
Seongsu Makgeolli is a traditional Korean Takju, a lightly filtered rice wine, from Gyeonggi province. This particular iteration offers a medium-bodied experience, characterized by soft textures and a subtle sweetness derived from the unctuous grains. The fermentation process contributes a comforting, rustic quality to this approachable and refreshingly clean Makgeolli.
The gentle sweetness and creamy texture of Seongsu Makgeolli find harmony with Korean-style fried chicken – Dakgangjeong. The crispy, slightly spicy glaze of the chicken is beautifully offset by the makgeolli's subtle lactic tang and soft rice notes. Alternatively, try it with a delicate, steamed seabass seasoned with ginger and scallions; the makgeolli cleanses the palate between bites, enhancing the fish's delicate sweetness.
